*2 - 3 large sweet potatoes

Wash the SPs and slice them into 1/4" to 1/2"thick chunks . Try to make them as uniform as possible so they dry evenly. Blanch the SPs in boiling water for 3-4 min, then soak them in lemon juice/water mix for 45 min (this will keep them from oxidizing while they dry and you wont taste the lemon.)
If desired, wrap each SP chunk in a piece of ham. (I know! YUM!)
Even space them in the oven on a drying rack. Set theoven to lowest setting (about 140F). If you have a convection/dehydrator oven - set it to dehydrator.
Let SP dehydrate practically FOREVER! It takes about 6 hours at ours house. If you are using aconventional oven, you should flip the chewies at around the halfway mark.
These can also be made in a countertop dehydrator.
