Koly's Third Birthday Cake  
A semisweet mix of Peanut Butter & Banana. Tasty for pups & peeps!

Time: 15 min. prep, 20 min cook

Ingredients:
 

  • 1 1/4 c.. Kolchak's Favourite Flour Mix
  • 1/4 c. unsweetened peanut butter - room temp
  • 1/3 c.  unsweetened peanut butter - melted
  • ANOTHER 1/3 c. unsweetened peanut butter melted
  • 1 1/2 tsp baking soda
  • 1 cup mashed over ripe banana
  • 1 tsp vanilla
  • 1 egg
  • 2 tbsp. water
  • sprinkle cinnamon
  • 2 small macintosh apples
  • 1 tablespoon honey
  • 2 tablespoons water

We made these in silicone mini bundt cake molds, so that we would have a convenient spot to pot the apple filling, but silicone cupcake molds would work as well.

Got Everything??OK! Let's GO!


Preheat oven to 350F. Place cake molds on cookie sheets.

In a medium bowl, mix flour, cinnamon and baking soda. Use a fork to "fluff" the dry ingredients up and incorporate some air.

In a separate medium bowl, combine 1/4 cup room temp. PB, 1/3 cup melted PB, mashed banana, vanilla, water and egg. Mix thoroughly. Add wet ingredients to dry and mix. Melt the remaining 1/3 cup of PB and add as needed to make a cake "dough" (You may not need ALL of the melted PB to do this. Should be the consistency of drop cookies - not runny enough to pour, but too wet and sticky to touch)

Use spatula to fill & level dough in cake moulds. Place in oven and bake for 20min - or until toothpick comes out clean.

While baking, dice 2 small macintosh apples. Place in saucepan with 2 tbsp. water & honey and heat on med-high for 5 -10 min until apples cook. Set aside and let cool.

Remove cakes from oven and let cool. If required, use a bread knife to trim extra cake from bottom, so the cake sits flat. Spoon apple mix into the well and, if desired, drizzle with PB.
