 *1 cup Kolchak's Favourite Flour Mix
*1 teaspoon sorghum
*1 teaspoon baking soda
*1/4 cup crushed peanuts

(pieces should be small enough not to pose a choking risk)
* 1 large egg
*1/4 cup olive oil
*1 teaspoon pure vanilla extract
* 1/4 teaspoon cinnamon
*1/4 teaspoon Allspice
*1/3 cup natural honey
*1 cup grated carrots
 Pre-heat oven to 325F.

In large bowl, combine flour, sorghum, baking soda, spices & peanuts. Mix in egg, oil, vanilla, honey and carrots until well-combined. Pour batter onto cookie sheet and bake 20 - 30 minutes at 325 degrees F until well done. Remove from oven, let cool. While they are delicious at this stage for a soft treat, to make them crunchy and to make them store for longer, cut them into squares (or bone shapes using a cookie cutter) and place them back into the oven at the lowest possible heat until crunchy (if you try to rush this - they will burn). This can take several hours depending on the humidity at your house.
